What is tapioca?

Tapioca is a starch obtained after cooking cassava flour in water or milk. Tapioca balls can be black, white or even transparent - the color depends on their content. White and colorless are obtained from starch in their natural form. Cassava root, brown sugar or caramel can be added to black tapioca balls. The consistency of such balls is defined as an intermediate between jelly and chewing gum. Therefore, their consumption is definitely an unusual experience. 

Tapioca itself has no taste, so it is often soaked in various kinds of additives, e.g. in coffee, juices, alcohol or water with sugar, to give it the right aroma. It is thanks to Bubble Tea tapioca balls that it is often called "Pearl Milk Tea", a pearl milk tea. 

Tapioca black or white?

In our offer you will find both black and white tapioca. How do they differ from each other?

Black balls (so called "instant balls") are already partially processed and are suitable for almost instant consumption. At the production stage, brown sugar is added to them, thanks to which the tapioca beads have a dark color and a mild, sweet taste. Before consumption it is enough to throw them into the boiling water for 5 minutes and then rinse thoroughly in cold water.

White tapioca pearls are a raw, unworked product, consisting exclusively of manioc flour. They should be boiled before consumption. Cooking white tapioca should not take less than half an hour. After this time, the tapioca pellets should be set aside for another 30 minutes to absorb the rest of the water, thus becoming elastic. Pearls prepared in this way have no taste, smell or color.

For Bubble Tea most often black tapioca beads are used, which are much faster and easier to prepare and have a more interesting and distinctive color and taste.

White tapioca - how to prepare it?

Here is a simple instruction on how to cook tapioca for the Bubble Tea:

1) Boil 600 ml of water

2) Add 100 g of tapioca pellets to boiling water and stir

3) Cook for 30 minutes on a low flame, stirring occasionally

4) turn off the burner and wait 30 minutes

5) prepare the syrup in a separate vessel: dissolve 2 teaspoons of honey and 4 teaspoons of sugar in 150 ml of boiled chilled water

6) Drain off the tapioca pearls and add syrup to them

7) you can add tapioca balls to your Bubble Tea

Tapioca - properties and applications

Tapioca and its properties are now appreciated all over the world. It is not only easily digestible, low in calories and gluten-free, but also contains small amounts of protein and does not cause allergies. Tapioca balls are popular mainly in Asia, where they are used to prepare Bubble Tea. In European cuisine, tapioca pearls have a much wider use, and tapioca dessert recipes are extremely popular in addition to bubble teas.
